Eggs and Mushroom Melt

For not being much of a cook, I’ve been making some Weight Watchers recipes over the last couple days. Of course, they’ve been really easy recipes. But hey, it’s a start and at least I’m:

  1. eating healthier – thanks to getting back on the Weight Watchers wagon
  2. making an attempt to learn my way around the kitchen – this is huge for me

So, today’s cooking adventure was quick and easy (huge plus!). The food was delicious (okay, so the English muffin may have been over toasted burned and a bit too crunch/black/burned tasting) and super filling. Here is a pic of my ‘breakfast’ (technically it was lunch cause I didn’t eat it until almost noon) eggs and mushroom melt:

Serving Size: 1


  • 1 English muffin (3 points)
  • 2 eggs (4 points)
  • 1 cup mushrooms (0 points)
  • chopped onion (0 points)
  • 1/2 Tbsp. extra virgin olive oil  (2 points)
  • 1/4 cup shredded Colby-jack cheese (3 points)


  1. Put oil, onion and mushrooms in pan and saute for 2-3 minutes. 
  2. Add eggs and use a wooden spoon to mix together. Cook until eggs are done.
  3. Toast English muffin.
  4. Add egg mixture to English muffin, put cheese on top and melt cheese (I used my toaster oven on the keep warm setting & it melted the cheese for me)

Total Points: 12

Note: I had 1/4 cup avocado on the side and watermelon also…the avocado added 2 more points so it was 14 total for this whole meal – definitely worth it, very filling!
