Bacon Spinach Salad

I haven’t had a chance to give this recipe a try yet but it sounds really good and it’s only 1 Weight Watchers point.

Bacon Spinach Salad

Makes 4 servings

Ingredients:

4 slices turkey bacon (diced)
1/4 cup white or cider vinegar
8 ounces spinach (coarsely shredded)
5 medium green onions (about 1/3 cup)
2 teaspoons sugar
1/4 teaspoon salt
1/8 teaspoon pepper

Directions:

  1. Cook turkey bacon until crisp. Stir in vinegar. Heat thoroughly and remove from heat.
  2. Add spinach and onions to bacon mixture. Sprinkle with sugar, salt and pepper. Toss 1 to 2 minutes or until spinach is wilted.

Zesty Lime Steak Recipe

I don’t know why but I sure have been craving steak lately!Here’s a great recipe that only has 4 Weight Watchers points.

Zesty Lime Steak Recipe

Ingredients:

  • 2 pounds boneless beef top round steak (about 1 inch thick)
  • 1/2 teaspoon grated lime peel
  • 1/3 cup lime juice
  • 1 tablespoon chopped fresh cilantro (I prefer parsley)
  • 2 teaspoons vegetable oil (I use Extra Virgin Olive Oil)
  • 1/4 teaspoon salt
  • 1/8 teaspoon red pepper sauce
  • 2 garlic cloves (finely chopped)

Directions:

  1. Pierce beef with a fork several times on both sides.
  2. Mix all ingredients (minus the beef) in a shallow nonmetal dish (I actually just use a heavy-duty resealable plastic bag). Add beef to marinade mixture and shake to cover the beef.
  3. Refrigerate at least 8 hours (make sure you do not leave it in there for more than 24 hours! Make sure to occasionally turn the beef.
  4. Heat coals or gas grill.
  5. Remove beef from marinade. Cover and grill until done.

Major Binge Fest Tonight

Oi yo do I ever feel guilty, frustrated, ashamed and flippin mad at myself right now.

I totally pigged out last weekend and used the excuse it was a Holiday weekend. Ok well technically it wasn’t all weekend it was Saturday night and Sunday of last weekend. But I got right back on track Monday morning and thankfully the scale was still somewhat remotely nice to me last week (a .6 lb loss).

Chicken Quesadilla Salad

I can’t believe I forgot to post about the greatest salad to ever live ;-) I had a girls day out Tuesday the 23rd with a couple other awesome bloggers – Angel & Mary (luv ya girls!) and we went to Garfields for lunch. I couldn’t decide on which salad I wanted for lunch and I’m so glad I decided on the chicken quesadilla salad – it knocked my socks off! It was super super yummy! Probably NOT the healthiest salad (although really the only ‘bad’ thing on it was a handful of crushed tortilla chips and the quesadillas on the side oh and the dressing but I used the ‘fork’ method – dipped my fork and spread it around on the salad instead of dumping the salad dressing so I ended up using about 1/4 of it instead of all of it like I normally would).

I’ll definitely be having that again sometime! I honestly can’t tell you how yummy it was! I’m drooling just looking at the pic. LOL

Ice Cream Sandwiches – Hello Skinny Cow

Ice Cream Sandwiches Do you like ice cream? How about ice cream sandwiches?

I loooooooove ice cream! you must try The Skinny Cow low-fat ice cream sandwiches! I found The Skinny Cow brand low-fat ice cream sandwiches a few weeks ago when I wanted some more Weight Watchers ice cream sandwiches but didn’t want to pay $4.98 again so I started looking at other brands.

The first brand that caught my eye was The Skinny Cow’s image. It’s super cute. Kudos to whoever came up with the branding/logo for them. It’s catchy and cute!

So, I pulled out my handy dandy notebook Weight Watcher’s points finder and started checking out how many points The Skinny Cow ice cream sandwiches were.

My all time favorite – mint – was only 2 points (exactly how many the Weight Watchers ones were)! Woo hoo! Score! And even better? These were $1.00 cheaper than the Weight Watchers ones I had previously been buying!

I have to be honest here. I was expecting these to be a bit on the disgusting side. I figured another low-fat ice cream sandwich wasn’t going to be as good as the Weight Watchers ones. Wow was I wrong! I was pleasantly surprised at how good they were. On a scale of 1-10 I give them a 10. At least the mint ice cream sandwiches I give a 10. I tried the Skinny Cow chocolate peanut butter ones and I didn’t like those. Not to mention those ones are 3 points. I’d rather eat one of my favorite ones (mint) and only use 2 points!

So all in all I am totally sold out to The Skinny Cow ice cream sandwiches now! They are awesome and I love the fact that they are quite a bit cheaper than the Weight Watchers ones I used to buy! So if you haven’t tried The Skinny Cow brand yet I highly recommend you give it a try!

Guacamole Turkey Bacon Wrap Recipe

Recipes that are compatible with weight watchers is pretty simple to do. All you need to do is take a ‘regular’ version of a recipe and exchange out the full fat ingredients for low-fat versions. That’s the case with this Guacamole Turkey Bacon Wrap that I love so much!

I don’t remember where I found this recipe but it wasn’t a recipe with weight watchers points so I made my own version with reduced-fat cream cheese and turkey bacon and then just figured out the points from all the different ingredients.

It’s been one of my fave things to whip up for a quick lunch. The only thing I’ve noticed is if I eat it alone then it doesn’t fill me up. So I eat it with some soup, cottage cheese, fruits/veggies – whatever I feel like to make it more of a filling meal.

I Want To Devour Everything In Sight

I’m having a rough day – food wise. Do you ever have those days where you just want to eat everything in site? I’m so having one of those days. I’m sticking to the Weight Watchers plan, counting my points but nothing is curing the hunger I feel. I’ve tired a fiber bar (those usually work really well in filling me up), I’ve drank so much water I don’t know if I can put one more drop in me! I’ve tried fruit, I’ve tried vegetables. You name it I’ve tried it!

Yesterday my mom had a birthday party for my grandma and I (my birthday isn’t until the 20th…blech the big ole 35 is looming all too close!) and I did excellent by only allowing myself a thin sliver of cake and a very small scoop of ice cream. But for whatever reason as soon as I finished that cake and ice cream all I could think about the rest of the day was food! And it’s carried over into today.

Week #4 Weigh In

Hey everyone! I’m back with my 4th week’s weigh in. It’s a few days late but that’s because I was traveling back from Atlanta, Georgia on Monday and Tuesday. I was going to weigh in on Wednesday but I was pretty bloated and puffy feeling – assuming it was from being in the car so much and lack of stretching, etc.

Whether waiting one more day made a difference or not I don’t know. I’m excited to see that I still ended up with a loss after eating out every single meal for 7 straight days! I proved to myself that I can control my food choices no matter where I’m at or how hard I think it is.

Back From My Road Trip

I’ve been back home, from my 7 day ‘road trip’, since last night sometime after 7pm. I spent a little bit of time with my kiddo before putting him to bed and then hitting the sack myself! I was exhausted! Actually exhausted is an understatement!

I had so much fun! I was totally impressed with my ability to make mostly healthy choices (and considering I ate at a buffet several days that’s impressive!) and when I wanted something I allowed myself to have a couple bites of it! I even had a couple bites of dessert a few times!

Reader Tips – Healthy Eating And Snacking While Away From Home

Yesterday I posted about needing your help for some suggestions on how I can eat out for a week, with my upcoming trip to NAMS, and do it healthy. There were several of you that took the time to comment and give me some tips – thank you ladies :-)

Anyways. I think I have somewhat of an action plan in place. I don’t feel 100% confident still about eating out everyday for a week but I feel a little better now that I have some ideas.
